Culinary centrifugation — the process of centrifuging foods for the purpose of extracting specific components — aims to do just that. Most foods, even those that seem homogeneous to the naked eye, are actually made up of individual components such as fats, liquids and solid matter. These components all have different densities. Therefore, when subjected to high G-forces, they separate into distinct layers.
